Everybody Loves Daddy

What more needs to be said? These boys adore their daddy. The other day he had a craving for chocolate chip cookies, and my two assistant cooks jumped at the chance to help him out. He even let Caleb try using the electric mixer. They had a blast and enjoyed the taste testing, too.


Then the latest bedtime ritual is horse-back riding Daddy. Both boys pile on top and enjoy a ride down the hallway to their room. As soon as they know that it's time for bed, they start calling, "Ride, ride, ride, ride!" Daddies are so much fun.

Debbie's (my mom's) Classic Chocolate Chip Cookies
(These are a staple in our home!)

2/3 cup margarine
2/3 cup shortening
1 cup granulated sugar
1 cup brown sugar, packed
2 eggs
2 teaspoons vanilla
3 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups or 12 oz. semi-sweet chocolate chips

Preheat oven to 325 degrees F. Mix all ingredients to the vanilla. Then mix in the dry ingredients, except for chocolate chips. Stir in chips. Spoon onto ungreased cookie sheet and bake 8 to 10 minutes. Yummy!
